Ingredients

  • 1 1/2 pounds 1 1/2 fresh green beans

  • 4 Tablespoons 4 butter, softened

  • 1/2 cup 1/2 pitted Spanish green olives, finely chopped

  • salt and pepper to taste

Directions

  • Place a large pot or high-sided skillet filled with water over high heat to boil. Season water with salt.
  • Drop the beans in. Cook until bright green and tender, about 3 minutes. Drain the beans and return them to the pan.
  • Return to medium heat and add in the olives and butter. Season with some salt and pepper. Toss to melt the butter and coat the beans.

Notes

  • If fresh green beans are not available, you can substitute canned beans. Skip the boiling. Just warm them along with butter and olives.
