What’s great about this recipe, is that it’s very versatile. You can make it as spicy or dilly as you want. We happen to like spice, so sometimes I add spicy dill pickles and/or spicy pepperoncini. But that’s okay, because this dish comes together in less than 5 minutes and is ready to eat when everyone gets home. Making this a perfect weeknight meal. Tips

  • Lightly spray the inside of the slow cooker with cooking spray to make clean up easy. I like to use olive oil.

Ingredients

  • 1 1 boneless beef chuck roast (about 3-4 pounds)

  • 1 jar (16 oz) 1 whole dill pickles, undrained

  • 2/3 cup 2/3 sweet chili sauce

  • 4 cloves 4 garlic, minced

  • 1 dozen 1 hamburger (or Brioche) buns

Directions

  • Lightly grease inside of slow cooker with cooking spray to make clean up easy.
  • Cut roast in half and place in slow cooker. Add pickles with juice, chili sauce and garlic.dill pickles on beef
  • Cover and cook on LOW 4-5 hours or on HIGH 8-9 hours, or until beef is tender and can be pulled apart with two forks.
  • Discard pickles. Remove meat. When cool enough to handle, shred the meat. Return to the sauce and heat through.
  • Broil buns 2-3 minutes to lightly toasted.
  • Using a slotted spoon, fill each bun with about 1/2 cup meat mixture. Top with sliced cheese and Sriracha sauce (for a little spice).

Notes

  • In the picture above you will notice that I used whole and sliced pickles. That’s because I was using what I had in the fridge. I had a half jar of whole dill pickles and some spicy dill pickles. This recipe is so versatile, you can use what you already have in your pantry.
