Chili Cheese Casserole (only 3 ingredients)
This quick and easy chili cheese casserole, with a twist, is my son, Clayton’s, favorite. He requests it every year on his birthday. This casserole goes together quickly with only 3 ingredients. Just add a side salad to complete the meal.
Instead of using cornbread or tortillas, this chili cheese casserole is made with Chili Cheese Frito chips. My chili cheese casserole is a crunchy, crowd-pleasing dish where layers of hearty chili and melted cheese bake together over a bed of crisp corn chips. As it cooks, the Frito chips soften slightly while still keeping a satisfying crunch, creating a rich, salty, cheesy comfort meal that’s as fun as it is flavorful.
My mother, Fay, first made this recipe for me many years ago. She used regular Frito chips and would add a half can of water to the chili. The extra water made the chips softer than we like. I have since tweaked the recipe to omit the water and use Chili Cheese Frito chips instead of regular ones. The Chili Cheese Frito chips add more flavor to the dish. I’ll admit this is not a fancy looking dish, but the taste is oh so good. You and your family are going to love it!
