My daughter-in-law, Abbie M, first introduced me to these amazing cheddar cheese biscuits last year and I’ve been making them ever since. They are soft, tasty and take very little time to make requiring only 5 ingredients. We enjoy them as a compliment to homemade soup or chili, or as a topping on homemade stew.

Ingredients

  • 2 cups 2 self-rising flour

  • 1/2 cup 1/2 unsalted butter, cut into small pieces

  • 1 1/2 cup 1 1/2 mild cheddar cheese, shredded

  • 1 cup 1 whole buttermilk

  • 1 teaspoon 1 Kosher salt

Directions

  • Whisk together self-rising flour and 1 tsp kosher salt in a large bowl.
  • Using your hands, work softened unsalted butter pieces into flour mixture until it clumps together and becomes pea-size pieces.
  • Stir in 1 cup shredded mild cheddar cheese.
  • Stir in whole buttermilk just until incorporated.
  • Using a 1/4 cup ice-cream scoop, drop biscuit dough onto cookie sheet. Sprinkle top with remaining 1/2 cup cheddar cheese.12 drop biscuits
  • Bake 11-13 minutes in a preheated 450 degree F oven until lightly brown.
