You’ll love dill pickle roll-up appetizers because they’re quick to make, irresistibly tangy, and always a hit with a crowd. Ingredients

  • 4-6 4-6 low carb flour tortillas (8 inch tortillas produce about 4 roll-ups)

  • 1 package (8 ounce) 1 cream cheese, room temperature

  • 1 cup 1 dill pickle relish

  • 1/2 teaspoon 1/2 garlic, finely minced

  • 1 1/2 cup 1 1/2 grated cheese, cheddar or pepper jack

  • fresh dill weed for garnish

Directions

  • Add softened cream cheese, pickle relish, garlic and cheese to a mixing bowl. Using a fork or spoon, mix together until combined.
  • Microwave tortillas for a few seconds to soften, making them a little more pliable and easier to roll up.
  • Work with one tortilla at a time. Divide cream cheese mixture evenly among tortillas. Spread mixture to the edges of tortillas.
  • Roll tortillas up jelly roll style.
  • Wrap rolled up dill pickle tortillas in plastic wrap. Store in the fridge for at least 2 hours to allow the flavors to meld and firm up. (Can make the day before.)
  • When ready to serve, remove from fridge and slice into about 1 inch slices. If desired, sprinkle fresh dill weed over the top.
  • Store leftovers in refrigerator.
