Bourbon Banana Bread

Bourbon banana bread is a full flavored, moist loaf made with ripe bananas and a splash of bourbon. The bourbon adds warm, complex flavors to banana bread, including notes of vanilla, caramel, brown sugar, oak, and a hint of spice. These flavors deepen the sweetness of the bananas, enhance the richness of the loaf, and give it a subtle, cozy warmth without making it taste strongly alcoholic.

When the my kids, grand kids, and in-laws left after the holidays, I found myself with 2 very ripe bananas. I’ve made banana nut bread multiple times but I wanted something different. So I searched the internet and found this recipe. I just made a couple of changes to match our taste buds.

Ingredients

Dry: All purpose flour, salt, baking soda, baking powder, granulated sugar.

Bananas: You will need 2 very ripe bananas.

Butter and eggs: 5 Tablespoons butter and 2 large eggs, beaten.

Nuts: The original recipe called for walnuts, but I like using pecans better. Pecans support the bread flavor without taking over.

Bourbon: The original recipe called for 1 Tablespoon of bourbon. However, I used 2 Tablespoons of Evan Williams. This gave the bread more flavor without the bourbon taking over.

Ingredients

  • 1 1/3 cup 1 1/3 all-purpose flour

  • 1/2 teaspoon 1/2 salt

  • 1/2 teaspoon 1/2 baking soda

  • 1/4 teaspoon 1/4 baking powder

  • 2/3 cups 2/3 granulated sugar

  • 5 1/2 Tablespoons 5 1/2 butter, softened

  • 2 large 2 eggs, beaten

  • 2 2 very ripe banana, mashed

  • 1/2 cup 1/2 pecans, coarsely chopped

  • 2 Tablespoons 2 bourbon (Evan Williams or your preferred bourbon)

Directions

  • Preheat oven to 350 degrees F. Use 1/2 Tablespoon of butter to grease a 9×5 inch loaf pan, and set aside.
  • Stir dry ingredients (flour, salt, baking soda, baking powder) together in a medium bowl. Set aside.
  • In a large bowl, mix the 5 Tablespoons butter and sugar together using a hand mixer, Kitchen-aid, or sturdy fork.
  • Add flour mixture until well blended and the consistency of brown sugar.
  • Gradually beat in the eggs.
  • With a fork or spoon, fold in mashed bananas, pecans, and bourbon. Scrape the batter into the pan and spread evenly.
  • Bake at 350 degrees F for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan on a wire rack for 5-10 minutes before removing from pan to cool completely.

Notes

  • Makes one loaf.
  • If you want to use unsalted butter you should increase salt to 3/4 teaspoon.
