Low Carb Bacon Cheeseburger Casserole

This low-carb bacon cheeseburger casserole brings all the flavor of a classic burger without the bun, layering seasoned ground beef with crisp bacon, cheddar, and a creamy egg-based sauce. Baked until bubbly and golden, it delivers a hearty, keto-friendly comfort dish that’s rich, savory, and satisfying.

While it may not look fancy, the flavors are amazing. Your whole family will love this low carb bacon cheeseburger casserole and you’ll love how simple it is to make. It is definitely a crowd pleaser.

Ingredients

Beef: We like to use lean beef, but you can use a fattier beef, just drain off the excess grease. The original recipe called for 1 pound of ground beef but I used 1 1/2 pounds and it works out fine. You can substitute the beef with ground turkey for a leaner dish. If you need to feed a bigger crowd, use 2 pounds of beef, then add half more of everything else.

Bacon: Dice it and fry it until crisp. You can leave it out if you’re looking for a lower fat content, but we LOVE bacon in this family. The more the better.

Sauce: This low carb bacon cheeseburger casserole uses cream cheese, ketchup, mustard, Worcestershire sauce, and seasoned salt (like Lawry’s) for a creamy sauce. The original recipe used 4 Tablespoons cream cheese, but I prefer to use 4 ounces or 1/2 stick of cream cheese.

Egg: I know it seems weird to add eggs in a cheeseburger casserole, but the egg holds everything together, adds extra protein, and helps keep you full. You won’t even know it’s there. The original recipe uses 1 teaspoon hot sauce. We like spice so I use 2 teaspoons of our favorite hot sauce (Cholula).

Fresh ingredients: Chopped sweet onion, minced garlic and fresh dill are needed. The original recipe used 1/2 sweet onion and 1 clove garlic, but we like onion and garlic so I use 1 medium to large sweet onion and 4-5 cloves of garlic.

Cheese: What’s a cheeseburger casserole without cheese? We sprinkle plenty of shredded cheddar cheese over the top.

What about the ketchup?

If you want to keep the carbs down, use No Sugar Added Ketchup.

How To Make Low Carb Bacon Cheeseburger Casserole

Brown ground beef in a skillet. Add onions and garlic and saute until onions are translucent.

Add cream cheese, ketchup, mustard, Worcestershire sauce, seasoned salt to the skillet and cook over low heat, stirring constantly until combined.

Spread the beef mixture into a greased 8×11 baking dish. Top with chopped cooked bacon.

Crack eggs into a medium bowl and whisk together with the heavy cream until combined. Stir in pepper and hot sauce. Pour egg mixture over the beef and bacon.

Top with cheddar cheese and bake at 350 degrees F for 30 minutes or until set and golden on top. Sprinkle with fresh dill before serving.

Ingredients

  • 1 pound 1 ground beef

  • 1/2 pound 1/2 bacon, chopped

  • 1 large 1 sweet onion

  • 4-5 cloves 4-5 garlic

  • 1/2 stick (4 oz) 1/2 cream cheese

  • 2 Tablespoons 2 ketchup (use no sugar added to keep the carbs down)

  • 1 Tablespoon 1 yellow mustard

  • 1 Tablespoon 1 Worcestershire sauce

  • 1 teaspoon 1 seasoning salt (like Lawry’s)

  • 4 large 4 eggs, beaten

  • 1/4 cup 1/4 heavy cream

  • 1 teaspoon 1 ground black pepper

  • 2 teaspoons 2 hot sauce (like Cholula)

  • 8 ounces 8 shredded cheddar cheese

  • 1 teaspoon 1 fresh dill, chopped

Directions

  • Dice bacon into small pieces and cook in a large skillet over medium heat until crisp. Remove bacon from the skillet and set aside. Drain grease from pan.
  • Add the ground beef to the skillet and cook until browned, crumbling as it cooks. Drain fat.
  • Add onion and garlic to the skillet with the meat and cook until onion is translucent, about 5 minutes.
  • Add cream cheese, ketchup, mustard, Worcestershire sauce, and seasoning salt to the skillet and cook over low heat, until combined.
  • Spread meat mixture into a greased 8×11 baking dish. Top with cooked bacon.
  • Crack eggs and heavy cream into a medium bowl and whisk together. Stir in black pepper and hot sauce.
  • Pour egg mixture over the beef and bacon.
  • Top with cheddar cheese. Bake in preheated 350 degree F oven for 30 minutes or until set and golden on top. Sprinkle with dill before serving.
