Easy Breakfast Tortillas

This easy breakfast tortilla is one of my families favorite breakfasts and great when feeding a crowd. It makes 12 servings and goes together quickly. Just serve with a side of fresh fruit for a quick and hearty breakfast.

This breakfast tortilla is filled with fluffy scrambled eggs, crispy golden hash browns, and savory sausage making for a satisfying start to the day. The warm tortillas wrap everything together, letting the rich, comforting flavors meld into each bite. It’s simple, filling, and perfect for a cozy weekend breakfast.

Some time ago, I saw this recipe on Instagram and I’ve been making it ever since. I like to change up the type of sausage depending on what I have on hand. Sometimes I use breakfast sausage and other times chopped boneless skinless smoked sausage. Kids love it too. Not only is it tasty but it can be eaten with your hands!

Ingredients

Flour Tortillas: You will need 6 extra large flour tortillas. They hug the other ingredients by forming the base and top of the dish. Place one tortilla onto the middle of a cookie sheet. Lay the other four on each side with half on the first tortilla and the other half hanging over.

BWW Southwest Ranch Sauce: We absolutely LOVE this sauce. We first tasted it while eating at Buffalo Wild Wings and it was love at first taste. Fortunately, we can now buy it at Walmart, so we always have some on hand. But feel free to substitute your favorite sauce.

Hash Brown Patties: You will need 9 thawed rectangular hash brown patties. They usually come in a package of 9-15 and can be found in the freezer section of your local grocery store. Any brand will do.

Eggs: Ten scrambled eggs nestle atop the hash browns.

Sausage: If using breakfast sausage, first cook and break into small pieces. If using Eckrich precooked skinless smoked sausage, chop into small pieces.

Cheese: Any of your favorite cheeses can be used, sliced or shredded. We like to use Cheddar and/or Colby Jack. You will also need 2 additional slices to hold the tortillas together.

Additional Ingredients Needed: salt, pepper, melted butter, and Everything Bagel seasoning.

How To Make Breakfast Tortillas

While this may seem like a lot of steps, they go together quickly.

  1. Lay 5 tortillas onto a cookie sheet.
  2. Brush with BWW Southwest Ranch sauce.
  3. Add 9 thawed rectangular hash brown patties.
  4. Top with 10 scrambled eggs. Sprinkle with salt and pepper to taste.
  5. Top the eggs with cooked sausage.
  6. Top the sausage with slices of cheese or shredded cheese.
  7. Top the cheese with 1 tortilla.
  8. Place 1/2 slice of cheese on the tortilla on the left and right side. Fold up the tortillas (over the cheese slices) and repeat with the other two sides.
  9. Brush top with melted butter.
  10. Sprinkle with Everything Bagel seasoning.
  11. Place parchment paper on top and weigh it down with another cookie sheet.
  12. Bake at 450 degree F (232 C) for 20-30 minutes.

Ingredients

  • 6 extra large 6 flour tortillas

  • 10 large 10 eggs, scrambled

  • 16 ounce 16 breakfast sausage, cooked and crumbled (or 15 oz Eckrich skinless smoked sausage, chopped)

  • 9 rectangular 9 hash browns, thawed

  • 3 Tablespoons 3 Buffalo Wild Wing Southwest Ranch sauce (or sauce of your choice)

  • 9 slices 9 cheese or 2 cups shredded cheese

  • 3 Tablespoons 3 butter, melted

  • 2 Tablespoons 2 Everything Bagel seasoning

Directions

  • Place parchment paper on top and weigh it down with another cookie sheet.
