Ingredients

Ground beef: This Best Meatloaf Recipe calls for 1 1/2 pounds of ground beef. This may seem like a lot but we love leftover meatloaf sandwiches. If you only want to use 1 pound of ground beef, then reduce the number of eggs to 2. I’ve not tried it with ground chicken or ground turkey. To be honest, I’ve always thought of meatloaf being made with ground beef only.

Stove Top Stuffing: I like to use chicken flavored stuffing but any flavor will work.

Eggs: This Best Meatloaf Recipe calls for 3 large eggs. However, as mentioned above, if you use only 1 pound of ground beef, use 2 large eggs instead.

Ketchup: Any brand of ketchup will work. This Best Meatloaf Recipe suggests you divide the 1/2 cup of ketchup. The first 1/4 cup goes in the mixture and the second 1/4 cup goes on top. However, I have made it many times putting the full 1/2 cup ketchup in the mixture then spreading more on top before baking. It makes the meatloaf more moist and flavorful, in my opinion.

This recipe is adapted from the one on the box of Stove Top Stuffing.

Ingredients

  • 1 1/2 pounds 1 1/2 ground beef

  • 1 box 1 Stove Top Stuffing, chicken flavored

  • 3 large 3 eggs

  • 1/2 cup 1/2 ketchup

  • 1/2 cup 1/2 water

Directions

  • Preheat oven to 350 degrees F.
  • In a large bowl, with your hands, mix together the ground beef, dry stuffing, eggs, water and half of the ketchup. (Can use all of the 1/2 cup ketchup, if desired.)
  • Place the mixture into a greased 9×13 inch pan. Form mixture into a loaf shape. For easier clean up, place it in a foil lined pan. If using only 1 pound of ground beef, reduce the size of your pan accordingly.
  • Spread ketchup over the top. You can also use BBQ sauce, chili sauce or a combination of sauces.
  • Bake for 45-50 minutes or until the internal temperature reaches 160 degrees F.
  • Allow meatloaf to rest for about 5 minutes before slicing.
  • Serve with mashed potatoes, gravy, corn or a side salad. The skies the limit!

  • Stuffing: Any flavor will do. We just happen to like the chicken flavor. The breadcrumbs from the box of stuffing absorb a lot of the moisture. So a higher fat ground beef works best for this recipe. If using a leaner meat, you might need to add a little extra water.
  • Feel free to spice up the recipe to meet your taste buds by adding diced onion, chopped garlic, shredded cheese or fresh herbs before baking.
